Sambar Powder or All Purpose Powder


















Ingredients:
  1. Corriander Seeds               -   1 Cup
  2. Pepper Corns                     -   1/3 Cup
  3. Toor Dal                            -   1/3 Cup
  4. Channa Dal                        -   1/3 Cup
  5. Fenugreek (Methi) Seeds   - 1 1/2 tbsps
  6. Black Mustard Seeds         - 1 1/2 tbsps
  7. Dry Red Chillies                 - 1 2/3 cups
Method:
  1. Keep a non-stick pan on the stove and add the above ingredients, according to the above order in 30 secs interval. Dry roast them in a simmer flame for about 5 to 10 minutes.
  2. No need for them to turn brown. Wait until it releases a pleasant aroma.
  3. Then grind them in a blender to a coarse powder.
  4. Store them in a air-tight container. It stays fresh for 2 months.


Uses:
  1. Sambar
  2. Puliothare
  3. Spinach or Green's rice
  4. Simply saute'd rice
  5. Vegetable gravy.

Rasam Powder

Ingredients:
  1. Corriander seeds (2 tbsps)
  2. Black Peppercorns (1tbsp)
  3. Red Chillies (2 tbsp)
  4. Toor dal (1 tbsp)
  5. Cumin seeds (3 tbsps)
  6. Methi seeds (1/4 tbsp)

Method:

  1. In a non-stick pan add the ingredients according to the above order.Fry it in the low flame.
  2. All the ingredients should loose its moisture.
  3. Cool and grind them.
  4. Store it in an air-tight container.

Note:

After using the powder, you can add or reduce the chillies in it.
